🧾 Ingredients

Dough

  • 2½ cups bread flour
  • 1 tsp sea salt
  • 1 tsp sugar
  • ½ cup warm water
  • 2 tbsp olive oil
  • 1 tsp active dry yeast

Sauce

  • ¾ cup roasted red pepper purée
  • 2 tbsp tomato paste
  • 1 clove garlic, minced
  • 1 tsp oregano
  • Salt & pepper to taste

Toppings

  • 1 cup crumbled goat cheese
  • ½ cup fresh baby spinach
  • ¼ cup caramelized onions
  • Handful of toasted pine nuts
  • Drizzle of balsamic glaze

👩‍🍳 Preparation Steps

1. Dough

  1. In a bowl, combine warm water, sugar, and yeast. Let sit 5 min.
  2. Mix in flour, salt, and olive oil to form a soft dough.
  3. Knead 5–7 min until smooth. Cover, let rise 1 hr.
  4. Punch down and stretch into a 12" round.

2. Sauce

  1. Whisk red pepper purée with tomato paste, garlic, oregano.
  2. Season with salt & pepper, set aside.

3. Toppings Prep

  1. Toss spinach lightly in olive oil, season.
  2. Caramelize sliced onions in a pan until golden.
  3. Toast pine nuts in a dry skillet until fragrant.

4. Assembly

  1. Spread sauce evenly over dough.
  2. Sprinkle goat cheese, then layer spinach & onions.
  3. Scatter pine nuts over top.

5. Bake

Bake at 220°C (425°F) for 12–15 min until crust is golden. Finish with a drizzle of balsamic glaze and serve immediately.
